That’s a tricky one.
While the parmesan in our recipes is made using a microbial-based (non-animal) rennet, it does contain animal-based lipase, both of which are necessary enzymes in traditional cheesemaking.
So far, we’re yet to find a suitable alternative that will ensure our recipes remain at their delicious best. But as soon as we do, we’ll keep you in the loop. If you prefer to avoid animal-based products, feel free to substitute them with your own choice of vegan/vegetarian cheese.
